I just updated IronRubyMvc to IronRuby 1.0 (I know 1.1 is out, but I wanted this thing working, and I only had 1.0 for .NET 2.0) and ASP.NET MVC 2.0. Please feel free to test it out: http://github.com/panesofglass/ironrubymvc/tree/mvc-2.0
