ISS Knowledge Base article 2190, "Additional Protocol Analysis Module (PAM) documentation", contains a Window's CHM file with a new, experimental generation of PAM help. It contains information about all of the different protocols that PAM parses as well as the signatures produced by each of those parsers. Please take a look at it and see if it answers your question sufficiently.
