This can easily happen if the connection between the EC and the DB is
slow.
The EC is not going to empty its own cache unless the DB confirms having
stored the data. 
It has nothing to do with the architecture itself; just the bandwidth
between the EC and the DB changes, and you have to take this into
account.

No, but after the DB install you can uninstall the EC only.
