I'm more familiar with Network Sensors than Server Sensors, but
changing the name on a Network Sensor is fairly easy and the process
for a Server Sensor is probably similiar.

The basic idea:  
1. Stop the issDaemon service
2. Make a backup of your issDaemon.policy file
3. Edit your issDaemon.policy file and change all instances of your
old sensor name to your new sensor name (for example, from
"server_sensor_1" to "foo").
This does *not* include any path names, only the names which appear in
the square brackets.  For example:

[\engines\server_sensor_1\];
SHOULD be changed

exe_name        =S      C:\Program 
Files\ISS\issSensors\server_sensor_1\issCSF.exe;
SHOULD NOT get changed (this example is for Windows, but the same
thing applies to other OSes)

4. Start the issDaemon service
5. Re-register the sensor in SiteProtector
