When you say "entire system" do you mean "the broker" or something more?

What exact latencies are you wanting to measure?

When you say "interceptors" do you mean the coarse-grained [network 
interceptors|https://activemq.apache.org/components/artemis/documentation/latest/intercepting-operations.html#intercepting-operations]?
