Let's skip googletest for now, and focus on the other toolchain dependencies:
* flatbuffers
* gflags (see https://github.com/conda-forge/gflags-feedstock/pull/5)
* snappy
* zlib
* (optional) brotli
libsnappy is used in parquet-cpp at the moment, but I want to move the
compression libraries to Arrow so we can implement compression here
