Summary: allow override for uri and expected_response in
health_check_config

currently http health checks expect the health check to located at "/health",
where the body content somewhere contains "ok".
I'd like to see two additional fields parameters added to the HealthCheckConfig
object:
- 'uri' = "/my/health/check/location"
- 'expected_response' = "HAPPY"
