I am not sure whether it's a good idea to keep these two different behaviours
for KafkaIO.write (When there's EOS enabled or when it is not).
After going through the source code, IMHO, it does not seem a lot of work to
use the ProducerRecord's topic when EOS is enabled (the same default behaviour
when there is no EOS enabled).
Please, happy to hear your thoughts.
