Fix threading issue with WatermarkEstimatorsTest

The issue was that the thread was calling an update method that wasn't going
through the wrapper object which was providing synchronization. Since the
wrapper objects only support exposing ManualWatermarkEstimator and
TimestampObservingWatermarkEstimator, there was no way to meaningfully test the
base one since it doesn't expose any "update" methods.
