[BEAM-9502] makes Schema UUID generation deterministic

The SchemaCoder uses a random UUID when generated. This change makes it so
it generates deterministic bytes based on the fields in the Schema, insuring
that identical Schamas still have identical UUIDs, but allowing them to be
deterministic.
