This can actually be done with {{$arrayElemAt}}:
https://docs.mongodb.com/manual/reference/operator/aggregation/arrayElemAt/#exp._S_arrayElemAt

It would look something like {{db.zips.aggregate([{$project: {lng: 
{$arrayElemAt: ["$loc", 0]} } }])}}
