Add jackson as data format to allow people to easily configure jackson for json

Fix For: Future
Currently jackson for json is available as the generic <json> data format. We
should @deprecated the <json> and let people use the specialized such as
<xstream> or <jackson> so they chose the json engine of choice.
Then we can offer jackson specific options to be configured, like we have for
xstream.
