After resolving CAMEL-18963, camel-openapi-java should support both OpenAPI 3.0
and 3.1, but currently our tests look like only against 3.0. Then it need to
check for 3.0 vs 3.1 in RestOpenApiSupport mthods renderResourceListing() and
getJsonFromOpenAPI()
