Looked at this yesterday and it will need to be a part of the spring-boot-4.0
upgrade, unless we decide to make the full jump to jackson 3. The issue here
is that spring-boot-dependencies 3.5.x - which we intend to align with in
4.17.0 and 4.18.0 is still on jackson 2.19.x, and until we move the camel main
branch to spring boot 4, this will probably cause issues.
Attaching a patch of the changes necessary.
