Summary: camel-jbang - project overview and TUI diagrams miss the
destinations of the Switch EIP

The project overview (camel overview, the camel_project_overview MCP tool, and
the TUI Architecture and Topology views) reads what each route sends to. It
does not see the destinations of the Switch EIP (CAMEL-24988):
* YAML: only to, toD, wireTap and enrich are read, not the uri of switch cases
and otherwise;
* XML: only elements with those names, not <case uri> and <otherwise uri> in
<switch>;
* Java: the Java DSL reader has no case for SwitchDefinition.
So routes connected through a switch are shown as not connected. The cases and
the fallback should be read as outgoing endpoints in all three DSLs.
Related to CAMEL-25178 (Switch EIP discoverability) and CAMEL-25192 (TUI jump
links, which handles switch).
