Due to CAMEL-11970, enabling serialization features on a new JacksonDataFormat
can now have the side-effect of modifying the Spring default ObjectMapper, and
modifying behaviour of RestControllers as well as other camel JacksonDataFormat
instances.
This behaviour, and how to avoid it, is not covered in the documentation
