Description: Similar to CAMEL-18380 but for the Kafka Topic name overriding
with the header kafka.OVERRIDE_TOPIC. This is useful for content based routing
while things like jq could send a jackson TextNode. (was: For example if a
header value is a Jackson TextNode, it fails to serialize with the current
DefaultKafkaHeaderSerializer. camel-jackson provides the TypeConverter which
could convert the TextNode into a String.)
