The Cordova-iOS package does not define which SDK version the app is built with, so the version of Cordova-iOS does not affect the SDK version used. The SDK version used to build the app depends on the version of Xcode installed. For example, Xcode 16 includes SDKs for iOS 18. If you have Xcode 16 installed—and it's the only version available in your environment—then all apps built using either Xcode or the Cordova build command will be built with the iOS 18 SDK.
