I just found myself doing all those things. =]
Here's are the issues that I've uncovered:
1. the default icon generation does not support this new resolution requirement
in iOS 9.x
2. the default icon generation generates an obsolete icon-60.png which will
cause a compiler warning and store validation failure
3. fulfilling iOS app catalog requirements may be a hard problem for Cordova to
solve without knowing the iOS deployment target during CLI use
