Resolution: Won't Fix

targetWidth/targetHeight maintain aspect ratio, so if you set 400x400 on a
400x300 image it will remain as it is.
About the cropping screen, it's handled by iOS, not by cordova, so we can´t do
anything about it, you might try to send a bug report to apple
