We need to log I/O along with some stats. {{CompletionCallback}} doesn't
provide access to the response and {{ContainerResponseFilter}} doesn't allow to
retrieve data stored in the {{ContainerRequestContext}} (within a
{{ContainerRequestFilter}}). This is why we resorted to using a servlet filter.
