Enhance the chat archiver to store archives in \{{docs/daily/CHANNEL}} folders

Let's add some hierarchy to the folders under {{docs/daily/CHANNEL/}} to keep
from having too many sub-folders in a single folder.
Before: {{docs/daily/CHANNEL/YYYY-MM-DD/index.html}}
After: {{docs/daily/CHANNEL/YYYY/MM/DD/index.html}}
e.g. {{docs/daily/fineract/2025/12/21/index.html}}
This beginner-friendly ticket applies to the
[https://github.com/apache/fineract-chat-archive] repo only. This is a small
Java project, and easier to work on than the main apache/fineract codebase.
