Summary: Update Quick Start documentation to focus on PostgreSQL
only

The current Quick Start documentation includes both MariaDB/MySQL and
PostgreSQL as supported databases.
Since FSIP-9 has been accepted, PostgreSQL should be the primary and
recommended database.
This improvement updates the Quick Start section to reflect PostgreSQL as the
default database and aligns the documentation with the current project
direction.
