[FLINK-8697] [Kinesis Connector] Rename DummyFlinkKafkaConsumer in

## What is the purpose of the change
`DummyFlinkKafkaConsumer` in `KinesisDataFetcherTest` should be named
`DummyFlinkKinesisConsumer`
## Brief change log
Rename `DummyFlinkKafkaConsumer` to `DummyFlinkKinesisConsumer` in Kinesis
tests
