   We need to revert back to an older Elasticsearch version as the newer 
versions have a different, more prohibitive license.

   - Revert back from 7.15.2 to 7.10.2 (which is the newest version that still 
uses the Apache license)

   This change is already covered by existing tests, such as unit tests, 
end-2-end tests.
