The Flink docs currently integrate the docs of a specific connector release.
This implies that we need to update this integration for every single connector
release, and can't hotfix the connector docs as we do for Flink releases.
We should consider having tag in the connector repos for minor Flink versions
(e.g, Flink-1.16) such that Flink doesn't have to select a specific connector
version but just uses "whatever works with 1.16".
This does imply that we'd change the tag now and then, which isn't perfect but
imo worth it.
