Multiple PRs have upgraded the dependency versions for sink connectors in Flink
CDC 3.6.0.

What needs to be documented:
1. Update the Fluss pipeline connector documentation to reflect version
0.9.0-incubating.
2. Update the Iceberg pipeline connector documentation to reflect version
1.10.1.
3. Update the Paimon pipeline connector documentation to reflect version 1.3.1.
4. Document any new features or API changes introduced by these version
upgrades if applicable.
5. Update any version-specific configuration or compatibility notes.
