Adds a guide for UDF and DataStream code that builds or edits a VARIANT with
the API from FLINK-41338.
Scope:
* How a builder works: handles, recorded edits, one write in build(), and a
source value that never changes.
* Building a new value with Variant.newBuilder() and Variant.of.
* The error table, and how the Java methods differ from the SQL functions: no
TRY_ forms, an add creates a missing place, and build() returns the whole value.
* A migration table off the deprecated VariantBuilder#of, ofNull, object and
array.
* Variant#normalize(): why the metadata keeps removed names, and when to call
it.
Depends on FLINK-41338. The normalize part depends on FLINK-41343.
