*Problem*
The Postgres, SQL Server and Db2 source tests run on old or unmaintained
database images, and the supported-versions docs don't match what CI runs.
*Evidence*
* Source {{PostgresE2eITCase.java:66-67}} still uses {{debezium/postgres:9.6}}
(end-of-life). FLINK-37696 moved the other Postgres tests to {{postgres:14}}.
* Both Db2 test Dockerfiles ({{db2_server/Dockerfile:17}},
{{docker/db2/Dockerfile:17}}) build on {{ibmcom/db2:11.5.0.0a}}, pushed
2019-07-12. IBM now publishes {{icr.io/db2_community/db2}}.
* SQL Server is tested only on {{mssql/server:2019-latest}}.
{{flink-sources/overview.md:44}} lists PostgreSQL JDBC driver 42.5.1; the
connector ships 42.7.3.
*Proposed fix*
* Postgres: run the source e2e test on {{postgres:14}} with
{{wal_level=logical}} and the {{pgoutput}} plugin, as FLINK-37696 did.
* Db2: base both Dockerfiles on {{icr.io/db2_community/db2:11.5.9.0}}.
* SQL Server: use {{mssql/server:2025-latest}} in the connector ITCases and the
source and pipeline e2e tests.
* Docs (en and zh): add SQL Server 2025 and fix the PostgreSQL driver version.
*Acceptance*
* No test references {{debezium/postgres}}, {{ibmcom/db2}} or
{{mssql/server:2019}}.
* The affected ITCases and e2e tests pass on Flink 1.20.3 and 2.2.0.
Oracle is out of scope: maintained Oracle images are CDB-only, which needs
separate test and connector work.
