### Search before asking - [x] I searched in the [issues](https://github.com/alibaba/fluss/issues) and found nothing similar. ### Motivation Currently, the eventProcessTimeMs metric in the coordinator server has no event_type label, which makes it difficult to evaluate the event processing performance of different event types. ### Solution Add a label to the eventProcessTimeMs metric.
