[~vnick] - yes, good point. We should explicitly document the Docker
environment variables now provided for SAML in the manual.
If it proves beastly cramming things into the existing, monolithic Docker
section, I think we should consider whether it would be better to document
Docker environment variables alongside the corresponding properties in other
parts of the manual.
