As an update after a few more running days...
5 users logged in, and 17 guacd threads.
I'm running on Rocky Enterprise 8.10 with the latest patches, so freerdp-devel
there is: freerdp-devel-2:2.11.7-10.el8_10.x86_64

This behavior isn't really tied specifically to RHEL type systems because many
other users above experienced similar behaviour on other Linux versions.
