didn't have nessie configured properly for rest support. For rest, all the
configuration about storage and access to it, needs to be done in the server
side (nessie in this case) rather than on the client side like when used
without rest api. After configuring nessie properly, this configuration worked
fine:

@sebaap I am just starting to learn about Nessie and PyIceberg, currently
trying to wrap my head around how to configure everything. Would you be kind
enough to share your configuration for Nessie server that were compatible with
this PyIceberg config you posted here? I haven't fully understood yet which
config goes where.
