Iceberg's Java RESTSigV4AuthSession routes through SignerChecksumParams.checksumHeaderName → AbstractAws4Signer.putChecksumHeader → BinaryUtils.toBase64, soJava also produces Base64. The RestSigV4Signer subclass exists because the C++ SDK has no checksumHeaderName equivalent.
