   I agree with @pan3793 that we should keep 1.20 longer and drop 2.0 when we 
add the next new version.
   
   Regarding the next version, I remember @mxm had a PR for Flink 2.2 and it 
was blocked due to the Iceberg 1.11.0 release to get Flink 2.1 out. Because 
Iceberg 1.11.0 took so long and we had Flink 2.3 released already. I am 
wondering if we just jump directly to add Flink 2.3 support and skip 2.2?
   
   With that approach, we will have 1.20, 2.1, and 2.3 support.
