Review Comment:
We should preserve defaults explicitly declared in `REPLACE TABLE` and
`CREATE OR REPLACE TABLE` (I checked the Spark side).
Both replacement methods currently use schema-only conversion, so they
silently loses their default.
We should use convert(tableInfo) to keep it.
