Another data point in favour of this fix: - Against Apache Polaris 1.3.0, which defaults new tables to v2, creating a table with a `timestamptz_ns` column through `RestCatalog` (0.10.1) fails with HTTP 500: "Invalid schema for v2: timestamptz_ns is not supported until v3". That is because the requested `format_version` never reaches the server. - Lakekeeper only behaves because its warehouse default can be set to 3. We work around it by passing `format-version` as a table property for REST catalogs, and then checking the version of the created table.
