Gentle ping on this one. It's rebased, CI is green, and @uros-b's option 2 is implemented. It's a small build fix: the BOM currently lists `iceberg-kafka-connect-runtime`, which is never published, so that entry can't be downloaded. @manuzhang @kevinjqliu could one of you take a look when you have a moment?
