The encryption example creates a table with only `encryption.key-id`. Since #14668 (1.11.0), encryption properties are rejected below format version 3, and tables are created as v2 by default, so the example fails with `Invalid properties for v2: [encryption.key-id]`. This adds `'format-version'='3'` to the example, matching the Spark encryption tests, and states the v3 requirement next to the required properties. The lines changed by #18220 and #17996 are left alone, so the PRs don't conflict. Test plan: the page passes the site's `pymarkdown` lint.
