URL: https://github.com/apache/iceberg/pull/18714

The JDBC catalog Java API example assigns
`CatalogUtil.buildIcebergCatalog(...)`, which returns `Catalog`, to a
`JdbcCatalog` variable, so the snippet does not compile. The variable is now
declared as `Catalog`, as the Nessie page does, rather than cast. This
refreshes the stale #17086 by @thswlsqls, which fixed it with a cast and had
been approved.

   Closes #17083

Test plan: docs-only change; checked the return type of
`CatalogUtil.buildIcebergCatalog`.
