   The AArch64 macOS 26 (C++20 Compat) job currently has a 30-minute timeout,
which leaves too little room for builds without an sccache cache hit.

   Recent examples:

   - [PR
#1066](https://github.com/apache/iceberg-cpp/actions/runs/41084579818/job/124162677606):
 exceeded the 30-minute limit. The Iceberg build and all 23 test targets
passed, but the job was cancelled during the C++20 example build.
   - [PR
#1071](https://github.com/apache/iceberg-cpp/actions/runs/41091816921/job/124187355760):
 passed in 29 minutes 23 seconds, leaving less than a minute of headroom.

   Both runs had zero sccache hits. Increasing the timeout(to 45?) would
accommodate cold builds and normal runner performance variation.
