A rejected attempt to set `encryption.key-id` on an unencrypted table left the table operations using that key, because the key was read from the new metadata before the commit was validated. Later writes through the same table then committed encrypted manifest lists to a table that other clients treat as unencrypted, making its current snapshot unreadable.
