What is the problem with changing the serde and format properties? The original ones cannot be used because they can't be instantiated (`FileInputFormat` is abstract). I don't see a downside to doing this. You can always set `engine.hive.enable=true` on a table to make it available. Also, what exactly is this PR doing?
