Technically there's `-DsparkVersions`, `-DflinkVersions`, `-DhiveVersions` and `-DscalaVersion`, as we can see from `dev/stage-binaries.sh`. So maybe we just document that each of those exists? Some things like `scalaVersion` only affect certain packages (namely Spark related ones).
