Currently build uses outdated Conan 1.6.x
This is inconvenient for many people trying to build it nowadays, especially on
macos where homebrew does not have a recipie for Conan 1.6.x and relies on
Conan 2.x to build & install some tools.
Also Conan 2.x allows to be a little bit more flexible about when you require
Conan for your build and when not.
