The Linux Demo Day project is a worthwhile thing for various LinuxChix
chapters and LUGs to take part in.  This year's Demo Day has come and
gone, unfortunately, but you've got plenty of time to plan for next
year.  Here's the url:

Hosting well-publicized demos/install-fests is another possibility. 
Plus just advertising your Chapter/LUG might get some curious people out
to meetings.  

Linux is being very well marketed these days.  It's all over the news. 
It's rare that people look completely bewildered when you mention it
now...most of the people who are likely to give it a try have already at
least heard the name, although they might not know much more than that.

Word of mouth is a powerful tool, as well.  No soapboxes, of course :)
