I think the documentation of the plugin is pretty straightforward. It comes
with some ready-to-go examples; the [Selecting Contents for Uber
JAR|https://maven.apache.org/plugins/maven-shade-plugin/examples/includes-excludes.html]
might be particularly interesting for you. This question is also handled [on
StackOverflow|https://stackoverflow.com/q/13620281/1523342] in much more detail
than is appropriate here. JIRA is an issue tracker after all, not a support
system.
