The JUnit BOM version moves to `versions.junit`, so the name still fits when
a Maven 4 line on Java 17 sets it to JUnit 6. The parent itself stays on
5.14.4, which runs on JDK 8, and Dependabot keeps ignoring 6.x here.
`versions.junit5` stays as an alias for the projects that read it: antrun,
assembly and archetypes pass it to their ITs, and failsafe uses it in an IT.
Setting `versions.junit5` no longer changes the version. Of the estate's
projects, only maven-hocon-extension sets it (to 5.11.3, below what this parent
manages), so it moves to 5.14.4.
Verified: a child of 51-SNAPSHOT resolves `junit-jupiter-api` 5.14.4 with
`${versions.junit5}` reading 5.14.4, and 6.1.3 when it sets `versions.junit` to
6.1.3.
