Our docker-minimal target was meant to be a static configuration for our most
used extensions. In the past years our docker build processes changed a lot and
we can now build any docker image passing the cmake options directly to our
docker build, so our docker minimal target's configuration is not static
anymore so it makes no sense in this form. We should update it to have it as an
actual minimal target with only the standard processors turned on (with maybe
the addition of libarchive and expression language extension as they are very
close to the core functionality).
