Thanks for asking [~dstiegli1].
In this case it seems best to avoid introducing additional complexity into the
schema inference strategy. The Starting Row strategy does expect all sheets to
follow the same format, so handling different sheets differently would require
flow changes to split the sheets into separate files.
The general idea of a record schema is that it applies to all records in a
given FlowFile.
